American Pie

The 4th of July is just around the corner and keeping with the All-American pie theme I thought I would try my hand at making a good ol’fashioned apple pie.  This apple pie recipe comes from the Betty Crocker wedding cookbook I received for my wedding shower – a wedding and a kid later I am opening it for the first time.  But I must say, the recipe is simply delicious and I will surely be using the cookbook again.  This time I decided to take my time to test the recipe since my cleaning lady was here today to watch the baby for me.  So here goes...

All American Apple Pie
  • 1/2 cup sugar
  • 1/4 cup all-purpose flour
  • 3/4 teaspoon cinnamon
  • 1/4 teaspoon ground nutmeg
  • dash of salt
  • 6 cups thinly sliced peeled tart apples (about 6 medium)
  • 2 tablespoons firm butter or margarine
  • 2 teaspoons water
  • 1 tablespoon sugar

Heat oven to 425 degrees.  Make pie shell or use store bought pie shell.  I used my sister, Erin's all butter pie shell recipe.

In a large bowl, mix 1/2 cup sugar, the flour, cinnamon, nutmeg and salt.  Cut butter into small pieces; sprinkle over apples.  Cover top with pastry that has slits cut into it or make a lattice top.

Brush top with 2 tsp. water; sprinkle with 1 Tbsp. sugar.  Cover edge with 2-3 inch strip of foil to prevent excessive browning, remove foil during last 15 minutes of baking.

Bake 40 to 50 minutes until crust is golden brown.  Serve a la mode!
