Paprika Pork Loin with Sticky Stout Barbecue Sauce




I found this recipe in a magazine months ago and put it in my personal recipe box. But, being me, I had to play around with the recipe to make it my own. I did not change much, but just a little can save you a lot of cooking time.

Ingredients
2 tablespoons paprika
2 tablespoons brown sugar
1 tabllespoon salt
1 garlic clove, chopped
1 teaspoon ground pepper
4 teaspoon chopped thyme or 2 teaspoon dried thyme
5 boneless pork loins
Sticky stout barbeque sauce

Method of prep
1. stir together first 5 ingredients . Rub the mixture over the pork and let chill uncovered in the refrigerator for at least an hour, up to 24 hours.
2. Grill pork on a medium to high heat on one side for about 4 minutes. Turn over and brush with the Sitcky Stout barbecue sauce. Let the other side grill for another 4-5  minutes, or until done. Let the meat rest and  brush with the sauce. You can serve with the rest of the sauce, or you can refrigerate it and use it the next day for grilled chicken!

Sticky Stout Barbecue Sauce
Ingredients
1/2 onion, chopped
1 tablespoon vegetable oil
2 garlic cloves, minced
1 (11 oz) bottle stout beer (I used Guinness)
1 cup barbecue sause
1/4 cup fig preserves
2 tablespoons apple cider vinegar
1 teaspoon red pepper flakes

Method of Prep
1. Sautee the onion in hot oil for about 4 minutes. Add the garlic and saute for 1 minutes. Gradually ( be carful the beer with overflow) stir in the beer. Cook 8-10 minutes or until mixture is reduced by half, reduce to medium.
2. Stir in the barbecue sauce and next 2 ingredients and cook 4-5 minutes or until heated.
