Enchiladas For One!


The past week I have been craving enchiladas. However, I live alone, and work a lot so I do not have a lot of time and energy to make traditional enchiladas. So this recipe I came up with is super simple and is perfect for yourself to enjoy and maybe have some leftovers!

Ingredients
1 small cooked rotisserie chicken, shredded
4 scallions
1/3 cup sour cream
1/4 cup cheddar cheese
1/4 cup mozzarella
12 oz enchilada sauce
1/2 tablespoon chili powder
4 flour tortillas
salt and pepper

Method of Prep
1. Preheat the oven to 350 degrees.
2. In a medium skillet over medium heat add the chicken, scallion, sour cream, cheeses, chili powder and salt and pepper until all melted.
3. In a small pyrex, ladle some enchilada sauce, add the rest of the sauce to a bowl. Dip the tortilla in the sauce, roll even amounts of the mixture in the tortillas. Arrange in the baking dish.
4. Top with the rest of the sauce and some more cheese and bake for 20-25 minutes.
