So it goes without saying, that as a working mother my free time is pretty limited. When it comes to making dinner I'm all about easy, versatile, and delicious dishes. This recipe is all that. I saw this idea in Southern Living Magazine, and knew immediately i had to try it out. It is a simple preparation in a single pyrex. First I layered the bulgar, then the asparagus, and topped it off with fresh salmon and lemon wedges. I then added a bit of chicken stock, popped it in the oven, and viola! Since mastering (you will be a master after your first attempt, guaranteed) this technique i have created several of my own creations such as: blackened chicken with jasmin rice and brussel sprouts; halibut with white rice and roasted parsnips and carrots. The possibilities are endless.
Ingredients
1 cup bulgur
1 1/2 cups chicken broth
One bunch asparagus
Salmon filet(s)
Lemon slices
Salt
Pepper
Directions
Preheat oven to 350 degrees.
Season salmon with salt and pepper.
In a pyrex layer the following ingredients: bulgur, chicken broth, asparagus, salmon filet(s), and lemon slices.
Cover and bake at 350 degrees for approximately 35 minutes or until salmon is cooked through.
